
Ingredients (serves 1)
- ¼ cup walnuts
- 100grams shredded chicken
- 4 Baby beetroots quartered
- 1 tablespoon crumbed fetta
- 2 cups spinach & rocket leaf mix
- ¼ cup tinned lentils
- 1/8 red onion sliced thinly
- Lemon infused olive oil or caramelised balsamic vinegar for dressing
Method
- Combine all ingredients together and serve immediately.For a vegetarian alternative add extra lentils instead of chicken
