Serves: 6

Ingredients:

  • 1 large tin salmon
  • 1 packet baby spinach leaves
  • 3 cups cooked wholemeal or high fiber pasta
  • 6 tablespoons pesto
  • 1 bunch asparagus
  • 6 mushrooms
  • 1 tub cherry tomatoes
  • 1 salad onion
  • 1 red capsicum

Method:

1. Slice vegetables and stir fry.

2. While waiting combine cooked pasta, salmon, pesto and spinach leaves.

3. Stir cooked vegetables into pasta mixture and divide into six.

4. Serve warm or cold.
