Serves: 2
Ingredients:
- 200g marinated garlic green prawns from the deli section of the supermarket
- 2 carrots sliced
- 2 handful of snow peas sliced
- 1 onion sliced
- 1/2 red capsicum sliced
- 2 tablespoons of crushed garlic
- 1 tablespoon margarine (I use Lite Nuttelex)
- Olive oil spray
- 2/3 cup cooked brown rice
Method:
1. Spray pan with olive oil and melt butter.
2. Add in prawns, vegetables and garlic. Cook until vegetables are soft and prawns are pink.
3. Serve on a bed of cooked brown rice
