Serves: 3

Ingredients:

  • 500g Chicken breast, chopped
  • 1/2 cup quinoa
  • 2 cups diced canned tomatoes
  • 1 cup capsicum, diced
  • 2 shallots, chopped
  • 2 zucchinis, chopped
  • 1 carrot, chopped
  • 22 Tbsp. dried Italian herbs
  • 2 cloves garlic, cruched
  • 1 tbsp olive oil

Method:

1. Heat oil in a non-stick fry pan and sauté 1 garlic clove crushed with shallots, capsicum, zucchini and carrot for 5 minutes.

2. Add the quinoa, chicken, canned tomatoes, garlic and italian herbs and cook for 20 minutes. Add more water if required. Season with salt and pepper.

3. Divide the quinoa and chicken dish into three serves.
